Eating Uncooked, Dry-Cured Meat

Under what circumstances can you eat dry cured ham not cooked?


The first thing you want to check is for the ham preparation instructions on the package. If it says you can serve the ham that way uncooked then it’s safe, otherwise check for the cooking instructions.  For instance some prosciuttos, serranos, and our Surryano dry cured hams can be eaten without further preparation—no need to heat treat them.  The curing process we use brings down the water activity levels to make certain products safe to eat without cooking. Just remember, as with all foods, safe handling practices must apply to insure your food is safe to eat.  Clean hands, utensils, and food prep surfaces must be clean.  No product can remain safe if it’s not handled correctly once the packaging is open—no matter how safe it arrived.
