RECIPE: Braised Pork Shoulder with Apples and Sauerkraut

Tangy and sweet, this braised pork dish from Fresh Fork Market will have your dinner guests going back for seconds! It’s a great dish that you can use your crockpot for, or cook on the stove, either way  – the real flavors of the pork will shine through.

Braised Pork Shoulder


  • 1 pork shoulder, excess fat trimmed
  • ½ jar sauerkraut (approx. 2 cups), drained
  • 3 tbsp oil or butter
  • salt and pepper
  • 1 whole onion, thinly sliced
  • 2 apples, peeled and cored
  • 1 tsp ground cardamom
  • 1 nice beer– an IPA or wheat beer are best


  • Set oven to 325. After you’ve cut off any extra white ribbons of fat around your pork, salt and pepper both sides and allow to rest at room temperature for 15-20 minutes. While you let it rest, prepare the rest of your ingredients: slice the onions, drain the kraut, peel the apples.
  • Heat up the butter or oil in a deep Dutch oven (6 qt or so), and brown both sides of the pork shoulder, about 6-8 min per side, until a crisp crust develops. Set aside on a plate.
  • Add in the onions and cook, stirring frequently, and add in a splash of the beer to deglaze the pan: scrape up all the little brown bits with the edge of a wooden spatula. After they start to get slippery and translucent, add in the apples, and dust with the cardamom. Cook for 1-2 more minutes, and then remove to a bowl, and turn off the stove-top heat.
  • If you’re using your oven: make a nest of the sauerkraut on the bottom of the Dutch oven and nestle the pork shoulder on top. Loosely scatter the onions and apples around the outside of the pork, and then pour the contents of your beer (you might not need all of it, maybe 2/3rds of the bottle) around the perimeter. Cover with the lid, and put into the oven for 2½ hours (I lowered heat to 300 after the first hour.) The meat is done when it shreds easily with a fork.
  • If you’re using a slow-cooker: follow the steps above except place all items into the cavity of your slow cooker, and cook on low for 8 hours or on high for 4-5 hours.
