RECIPE: Maple Pork Salad

This is a great summer salad recipe, paleo or not! It has something for everyone and add some bacon for a punch of flavor. Cheeky Chive’s mixture of grilled pork chops and fresh fruit and greens is one to delight any picnic, BBQ, or dinner table.

Maple Pork Salad

Ingredients:

  • 1 lb. pork chops
  • ½ lb. bacon (optional)
  • 4 cup spinach
  • 3 cup kale
  • 2 — pears (cubed)
  • ½ — pineapple (sliced into rings)
  • 1 — avocado (cut up)
  • 1 cup pea shoots (optional)
  • Dressing
  • ¼ cup red onion (diced)
  • ¼ cup white wine vinegar (may need to add T. extra)
  • 2 ½ T. olive oil
  • ½ tsp. dry mustard
  • 3 T. maple syrup

Directions:

  • Fry the red onion and combine all the dressing ingredients (red onion to maple syrup) in a bowl.
  • Remove 3 T. of the dressing and marinate pork in a Ziploc while you proceed.
  • Prepare the bacon if you are using it and crumble.
  • Prepare kale and spinach and place in large serving bowl.
  • Cut up the fruit and place pear and avocado on the greens.
  • Cook your pork (I like to grill it) and when finished cut into medallions.
  • Grill the pineapple or serve cold on the salad.
  • Pour the remaining dressing over the salad and mix well.
  • Place pork medallions on the top and serve – garnish with pea shoots if available.
